Skordalia, a delicious dip which enhances immune system

Two potatoes peeled

Lemon juice

Six peppercorns

Salt

Four garlic cloves

Half cup olive oil

Cook potatoes and drain. Blend ingredients together and eat with crackers or bread. Use as a dip with carrot and celery sticks or other raw vegetables in the warmer months. You can even add to soups and casseroles when the weather is colder.

Really tasty and good for the kids, keeping them healthy throughout the year.
